• Evolution is a 2500 barrel per year capacity brewery and quickly expanding.
  • Whole kernal grain (generally barley) is milled (milling), then mixed with hot water in a vessel called the mash tun (mashing)
  • The resulting liquid (wort) is run off into the brew kettle (lautering)
  • When the kettle is full it is brought to a boil and boiled for 1.25-1.5 hrs. Hops are added at various stages of the boil to develop bitterness, hop flavor and aroma.
  • At the end of boil the wort is cooled and pumped into a fermenting tank.
    Yeast is added.
  • Fermentation takes place in the fermenter over the next 5-7 days. At this time
    the beer is cooled and dryhopped if necessary.
  • The beer is further conditioned for 7-14 days, then filtered, carbonated and packaged in kegs or bottle
